All of my favourite salad dressings, fit for greens and grains…
Bridget’s House dressing 1

2/3 cups of olive oil or grape seed oil
4 T vinegar (cider, sherry, white or red wine vinegar)
3 T honey or maple syrup
1 t sea salt
Freshly ground pepper.

I put everything into a mason jar, put the lid on and give it a good shake.

Tip: Try making this with ½ walnut oil or hazelnut oil

Bridget’s House dressing 2
2/3 cups olive oil
2 T vinegar (cider, sherry or red wine)
4 T honey or maple syrup
4 t Dijon mustard
½ t oregano
Sea salt & pepper, to taste

Bridget’s creamy dressing
1 cup plain yogurt
¼ cup feta cheese
Juice of ½ lemon (or to taste)
1 T olive oil
1 small clove garlic
Salt & pepper to taste
Fresh herbs (chives are nice but oregano and basil are great too)
Whirr everything in a food processor, but just enough to combine (otherwise it gets too runny).
Lemon dressing:
Juice & zest of one lemon
5 T olive oil
1 T honey or maple syrup
Sea salt & pepper

Lemon dressing for pasta or grain salad:
Juice & zest of 1 lemon
1 clove garlic, minced
2 T olive oil
1 shallot, minced (or 2 T minced red onion)
Sea salt & ground pepper
3 T cider vinegar
1 t orange zest
2 T orange juice
2 ½ t Dijon mustard
2 T maple syrup
2/3 cup oil
Salt & pepper to taste
MJ’s house dressing
2 T crushed garlic
2 T Dijon mustard
½ cup balsamic vinegar
¼ cup hot water
1 T honey or maple syrup
1 T olive oil
Salt & pepper to taste
