Rhubarb juice -- refreshing, unique and oh so lovely
This easy to make juice is a nice alternative to fruit juice. Mix it half-and-half with carbonated water, add a sprig of mint and relax in the sun.
In a medium sauce pan bring to a boil:
3 ½ cups water
1/3 cup sugar
Add 2 ½ cups rhubarb and simmer for 5-10 minutes
Strain carefully (don’t press on the rhubarb)
Add juice of 1/2 lemon.
