Meatless Monday: cauliflower “steaks”

Roasted cauliflower steaks

I’ll eat cauliflower no matter what way it’s served, but this method of roasting cauliflower is my new favourite. It’s tasty, goes with anything and looks great on the plate.

Roasted cauliflower steaks

1 head of cauliflower
Olive oil for brushing
A dusting of paprika
Sea salt & pepper
A squeeze of lemon and a light sprinkling of lemon zest.

Preheat the oven to 400
Slice the cauliflower head into half inch slabs (3/4″ works too, if your thinner slabs are breaking apart). Brush both sides of each slab with olive oil, sprinkle with paprika and season with salt & pepper. Roast until fork tender, about 15 min. Squeeze a bit of lemon juice and grate a little zest over each slab.

Try different seasoning: curry, chili powder…
