Slivered Kale Salad With Shaved Parmesan and Lemon Zest

My sister-in-law Courtney would be the first to tell you
that she’s not a cook. But for someone who doesn’t do much cooking, she sure
has some great recipes.
A few of my favourites have come out of her kitchen, like this raw kale salad with shaved parmesan.
I was used to eating lots of cooked kale so at first this raw salad seemed a little daunting but let me tell you, when you chop the kale into strips or bite-sized pieces and massage the dressing into the leaves about 30 minutes before serving it becomes tender and delicious.
Tossed with parmesan, sautéed mushrooms and a few croutons, kale salad is a new favourite.

Courtney's Slivered Kale Salad with Shaved Parmesan
- 1 bunch chopped kale
- ½ cup shaved red cabbage
- ½ cup bread crumbs, toasted or croutons
- ¼ cup shaved parmesan
- 2 cups sautéed sliced mushrooms
- Zest of 1 lemon
Combine in a salad bowl and toss with the dressing. Rub the dressing into the kale and let the salad sit for 30 minutes before serving. The dressing helps to tenderize the kale
- 2 cloved garlic, minced
- Juice of 1 lemon
- Sea salt & pepper to taste
- Pinch of crushed red pepper
- 4 Tbsp olive oil
Combine in a bowl and whisk until smooth and the oil is
incorporated.
