Raw kale massaged with a garlicky lemon dressing becomes tender and delicious.
My sister-in-law Courtney would be the first to tell you that she’s not a cook. But for someone who doesn’t do much cooking, she sure has some great recipes.

A few of my favourites have come out of her kitchen, like this raw kale salad with shaved parmesan.

I was used to eating lots of cooked kale so at first this raw salad seemed a little daunting but let me tell you, when you chop the kale into strips or bite-sized pieces and massage the dressing into the leaves about 30 minutes before serving it becomes tender and delicious.

Tossed with parmesan, sautéed mushrooms and a few croutons, kale salad is a new favourite.

Courtney’s Slivered Kale Salad with Shaved Parmesan

  • 1 bunch chopped kale
  • ½ cup shaved red cabbage
  • ½ cup bread crumbs, toasted or croutons
  • ¼ cup shaved parmesan
  • 2 cups sautéed sliced mushrooms
  • Zest of 1 lemon

Combine in a salad bowl and toss with the dressing. Rub the dressing into the kale and let the salad sit for 30 minutes before serving. The dressing helps to tenderize the kale

Lemon Garlic Dressing:

  • 2 cloved garlic, minced
  • Juice of 1 lemon
  • Sea salt & pepper to taste
  • Pinch of crushed red pepper
  • 4 Tbsp olive oil

Combine in a bowl and whisk until smooth and the oil is incorporated.
