Melt in your mouth chocolate glazed sheet cake
This chocolate glazed sheet cake is melt-in-your-mouth delicious.
You hear the term “mouth-watering” often enough, but have you ever had it happen, had your mouth water over some sort of food? This is the only recipe that has done that to me. 

The recipe came from an old family friend, named Olga. No one can remember what she actually called the recipe but my eldest siblings renamed these squares Olga’s Best Ever, and for good reason.
 

Light and chocolaty and glazed with a thin chocolate icing these are a melt-in-your-mouth delicious. 


When I was little we used to get together with Olga’s family during duck hunting season. Dad and my eldest brothers along with Olga’s husband, John, and their boys would hunt all morning and we’d have a feast that night. Lasagne was always on the menu. I remember tasting the duck, spitting out one or two balls of lead and moving onto the lasagne.  We likely ate Olga’s Bets Evers for dessert. 

Ours wasn’t the only family that was crazy for these squares. About 10 years ago Olga made a batch for a fundraiser that my sister was hosting and two of my cousins had a bidding war over them. In the end they went for over $40. 

This recipe lies somewhere between a brownie and a cake. It’s moist and cake-like in texture, almost velvety, but they’re more the shape of a brownie. Baked in a jellyroll pan these are big batch bars that are great for parties.  They freeze well too. 

 

Melt-in-your-mouth chocolate glazed sheet cake

Known as Olga’s Best Evers in our house
  • 1 cup butter
  • 1 cup water
  • 4 Tbsp. cocoa
  • 2 cups flour
  • 2 cups sugar
  • ½ cup buttermilk
  • 2 eggs
  • 1 tsp. baking soda
  • 1 tsp. vanilla
  1. In a large bowl combine the cocoa, flour and sugar.
  2. In a medium pot bring the water and butter to the boil. Stir and remove from heat.
  3. Whisk the butter mixture into the flour mixture.
  4. Whisk in the eggs, buttermilk, baking soda and vanilla.
  5. Pour batter into a lightly greased jellyroll pan (about 11”x16”)
  6. Bake at 300 F for 25 minutes
Cool slightly then drizzle with this chocolate glaze

Chocolate glaze

  • ½ cup butter
  • 4 Tbsp. cocoa
  • 6 Tbsp. buttermilk
  • 1 tsp. vanilla
  • 3 cups icing sugar
  1. Bring butter, cocoa and buttermilk to the boil. Remove from heat. Whisk in vanilla and add icing sugar one cup at a time.
  2. Pour over warm cake
